On December 30, 2020, at the age of 39, Amber Kok Hitchcock, of Zionsville, IN, was given the gift of angel wings by her husband, Tom, while lovingly surrounded by family. It was their ninth wedding anniversary.
Amber Nicole was the first-born child of Alan and Ann (Ulmer) Kok and came into the world on February 1, 1981 in Grand Forks, ND. She became a big sister to her brother, Brandon, three years later.
The Kok family resided in Beulah, ND for the majority of Amber’s youth where she attended school. Amber was involved in girl scouts from an early age and blessed to have her mom as one of her leaders throughout that time. In High School, one of many activities Amber actively supported was Beulah Miner Wrestling. Her work as a statistician combined with her brother and dad’s love of the sport.
Upon graduating with honors from Beulah High School, Amber attended the University of Minnesota, Moorhead. She then transferred to the University of North Dakota, where she graduated with a degree in Chemical Engineering. While at UND, Amber became actively involved in the Society of Women Engineers and remained active throughout her career. During her internship with Toyota in Ann Arbor, MI, Amber was a volunteer working with the Legos Robotics teams. She then brought that program back to Beulah where it was implemented at the Middle School. Amber made many close friends during this time and enjoyed traveling with many of them. With her degree Amber was hired by General Motors as part of their Management Fellowship Program in Waterford, MI. She then went on to work at the Corporate Offices for Scotts Miracle Grow in Marysville, OH. Her last position was with 3M in Zionsville, IN.
It was in the city of Marysville, OH, while working for Scott’s Miracle Grow, that Amber met the love of her life, Tom Hitchcock. They were married at an intimate wedding with their closest family members in Marysville on December 30, 2011. They celebrated their marriage the following summer with family and friends at a reception at Amber’s favorite place, Beulah Bay, Lake Sakakawea, in North Dakota. An avid reader, Amber and Tom also enjoyed playing games, cooking, traveling to AZ and the lake, spoiling nieces and nephews, spending time with family and friends, and, of course, being dog parents to Tatum.
In a letter to Amber’s parents Tom wrote the following: “…Amber showed me what love truly is and how to be a better man. She always had more confidence in me than I did and pushed me to be so much more. You two raised the most wonderful and selfless woman I will ever know and I want to thank you for that.”
It is impossible to capture all that Amber was to those who survive her. Amber was the loving spouse to Tom, the first-born and only daughter to Alan and Ann Kok, big sister and mentor in life as well as business to Brandon and Jessi, a favorite aunt to Hannah, Hailey, and Brecken Kok, a special niece to her Aunt Amy Ulmer, daughter-in-law of Vickie and Gene Hitchcock, sister-in-law to Kyle, Mike (Ronica), Jim (Lori), Jeff (Kelli) and special niece and nephews, Amber, Alan, and Andrew Hitchcock, in addition to her other special aunts, uncles, nieces, nephews, cousins and friends.
Amber was greeted in Heaven by her grandparents, Alfred and Edith Kok and Albert and Mildred Ulmer.
The family would like to thank those who lovingly cared for Amber at Ascension St. Vincent in Carmel, IN. A Celebration of Life service will be held in North Dakota at Lake Sakakawea in July of 2021. In lieu of flowers, please donate to your local humane society.
